Ingredients
4 yellow potatoes, sliced (and cut in half)
2 tbsp butter, melted
1 package Lil Smokies sausages
2 zucchini, sliced (and cut in half)
½ onion, sliced (optional)
1 Olive oil
BBQ sauce (about ¼ cup or to taste)
Shredded cheddar cheese
Salt, to taste
Black pepper, to taste
Paprika, to taste
Garlic & Herb seasoning, to taste
Directions
1. Preheat your oven to 400°F.
2. Slice the potatoes and parboil them for 8–10 minutes, until just fork tender. Drain well.
3. Toss the potatoes with the melted butter and season generously with salt, pepper, paprika, and Garlic & Herb seasoning.
4. Add the potatoes to a large sheet pan. Top them with shredded cheese.
5. Add the sliced zucchini (and onion, if using) to the sheet pan. Drizzle with olive oil and season with salt, pepper, paprika, and Garlic & Herb seasoning.
6. Toss the Lil Smokies with BBQ sauce and place them on the sheet pan alongside the vegetables.
7. Bake for 20 minutes, or until the zucchini is tender and the potatoes are golden with melted cheese.
8. Serve and enjoy!
